Yes. Transcription happens on your Mac's Neural Engine — you can turn Wi-Fi off, sit on a plane, or run a firewall like Little Snitch and watch: zero outgoing requests. There is no server side to Jot at all.
Apple's offline dictation uses a small on-device model; Jot runs whisper large-v3-turbo — a frontier open model that handles accents, technical vocabulary, and 90+ languages far more accurately. And it works with one held key in any text field, without switching input modes.
